
If one good thing came out of my recent bout of the stomach flu, it is this delicious jello treat that my boyfriend’s mom (Luci) sent over when all I could eat was mush. Even though I’m feeling 100% better, I’ve already made this a couple of times as a great snack / dessert because I loved it so much.
It’s super simple, so here we go — all you need is a package of jello in a flavor of your choosing, yogurt (I like the Chobani Greek yogurt - perfect size and it has fruit chunks on the bottom), 1-2 bananas, and water.

Luci’s Healthy Jello:
Boil 1 cup of water for the jello (smaller box, if using larger box, double water). Once the water is boiling, dissolve the jello mix by stirring with a whisk until all the sugar crystals are gone. Then, remove pot from heat and pour 3/4 cup of cold water into the pot. Pour this into a blender, add the yogurt and 1.5 bananas (you can do more or less depending on how much you like banana). Blend until combined (I like to leave some chunks so I barely blend, but if you don’t like chunks blend a few seconds longer). Pour into small individual cups or a larger bowl and refrigerate. It takes 2-3 hours to solidify and then is ready to eat!
So far I’ve made orange jello with peach yogurt (amazing), lime jello with cherry yogurt (delish), and I’ve had strawberry / strawberry (perfect). This is likely more a child’s treat, but I think it’s perfect for any age - you have your protein from the yogurt, potassium from the banana and jello has some healthy properties too from the gelatin.
